Poorman's Feast...



Last night I finally got around to making my own version of the Poorman's Feast that I got from Depression Era cooking on Youtube. If you haven't seen/watched Clara tell you about the Depression while teaching you to cook meals from her childhood, you're missing something special. There are 7 episodes, all with a different recipe, and I just love them.

My version of Poorman's Feast used an Adele's sausage I've had in the freezer for a while (Clara's uses hot dogs). Since it was Chicken, Garlic, and Artichoke sausage, I decided to leave out the onions so the flavor of the sausage wouldn't be overpowered. So, I changed it up a bit, but stayed true to the inspiration. This was so easy to make...and everyone loved it! (Even the girl...who is getting a bit picky...but that is a different post.) Next time, I'm going to try to hunt up some fresh zucchini...that would have been awesome in it. So, when you're lacking inspiration (or just have ton of potatoes), give it a try...

Poorman's Feast - serves 4 generously

four russet potatoes (peeled or not) - we didn't peel, cut up into big pieces or diced (your choice)
1/2 Onion (chopped) - I left this out this time
6 hot dogs - I used sausages
grate cheese for topping
cooking oil

1. Using a big frying pan (everything has to fit in the one pan), pour in a generous amount of cooking oil, brown onions, then add chopped/diced potatoes . Turn heat onto medium and cover. Stir regularly until potatoes soften.

2. Once you've got the potatoes started, slice the hot dogs, then add them to the pan and put the lid back on. Stir occasionally until the potatoes are done.

3. When potatoes are done (soft enough to eat), put into serving bowls and top with grated cheese.

That's it! It was so good. It was hearty and filling without being over the top heavy. Listen, it was so good that Valiant forgot about ketchup until half way through the meal when Superman mentioned it. "Wow! Valiant didn't even run for ketchup!" (Then, of course, Valiant ran for the ketchup!)

okay, to be fair it just hit me that he ate all those potatoes and never got the ketchup. It was a compliment as to how good it was. I am convinced that Valiant will grow up and develop a genetically altered potato/ketchup hybrid.

This is similar to a sausage, potatoes and onions thing I've made but never added cheese before.
