Homemade Chicken Pot Pie
If you haven't already noticed, I am definitely a girl who likes to have a recipe to follow. That is just the way I am...most of the time, I don't think I've learned enough to make something up as I go along. Well, today I changed all that and made a chicken pot pot from scratch--including the crust! It turned out really well, in fact, the only thing I would change would be to add half a soup can of water to the filling before baking. Having said that Superman said it was perfect the way it was...between you and me, I think he'd like it even more with that little tweak.
Just in case you haven't made a chicken pot pie already, I'll give you my "recipe". It really was terrific and super easy.
In addition to two pie crusts (because you want to top it), you will need:
Filling:
2 chicken breasts - cooked and diced
1 bag frozen mixed vegetables
1 russet potato - cooked halfway and diced
1 regular-sized can of Cream of Chicken soup
Preheat your oven to 375...
Roll out your pie crust and lay into pie pan. Set aside
In a big bowl, mix together chicken, vegetables, potato, soup and 1/2 soup can of water. Put the filling into your pie pan (that already has one pie crust pressed into it). Top the pie with the other pie crust. Then bake for about 45 minutes...and serve!
That's it! Can you believe how easy that is? I cannot believe I made my own pot pie and it tasted good! Yay, me!

Oh this was SO good! I loved the crust and the filling. I can not wait for lunch time.
First, I love orange and lime green together. Really pretty and makes a room pop! Something about those citrus colors....throw a little yellow in for fun too!
Second, love that you made the tank tops and also what you did with the gym shirt. You are so creative! Wish I could sew, sigh. But I was never really inteested enough to do it.
Third, I can't believe you made your own pot pie either. Woohooo! I always cheat and use bisquick. Your recipe does look so easy.
Fourth, you have such a lovely way of expressing yourself with your words. I haven't read Alicia's post yet so I will have too. I have a couple of friends who have moved away and we have to email or do phone calls (mostly email).
One of my sisters moved away and I only see her a couple of times a year. I wish she'd move back but I don't see that happening.
When my friends moved I prayed every day for a good, close friend because I just felt like I had noone to go and have a coke with or go to a store with, etc.
One day I was having a coke with a friend from church and realized the Lord had answered my prayer! I think my sister is pretty lonely where she is though. She's found a great church so hopefully she'll make some friends there. She's just very shy.
Thanks for all your kind words and attention. I used to feel much more lonely for woman-contact, but I do feel more at peace these days...there is always a plan, even if we can't see it.
