Whole Wheat Waffles

My friend DarcyLee over at Darcy's Kitchen Kapers (and In This Season) posted this recipe for Whole Wheat Pancakes and Waffles and I knew right then and there I had to try it. This recipe definitely lived up to its first impression...the results were seriously good. I did make a few changes to suit my needs, but I followed her recipe as a guideline. Confession: I still hate using my waffle iron, but I must admit that I'll probably be doing it a bit more now that I have this recipe. They are that good.


Whole Wheat Waffles

adapted from Darcy's Kitchen Kapers
(makes 16 little or 4- 4 square waffles)

1 cup whole wheat flour
1 cup all-purpose flour
1 tbls ground flax seed
2 tablespoons sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon soda
2 cups buttermilk
1/4 cup melted butter
2 eggs

In large bowl, combine first 5 ingredients.

Add remaining ingredients; beat (or stir) just until large lumps disappear.

Heat waffle iron. Follow instructions above for mixing ingredients together. Bake in hot waffle iron until steaming stops (my waffle iron has a light that tells me when it is done) and waffle is done to a golden brown.

There you have it...simple, wholesome waffles. What more can you ask for in recipe?

This recipe sounds really good and I like that it is whole wheat. Who doesn't need something a little more nutritious in their lives.
