This is Primal - Eggs Over Easy with Bacon and Spinach

People always ask me, "But what do you eat?"

The answer?  I eat more and better than I've ever eaten before.  I have no food guilt...I never feel deprived.  Grains are just off the menu, so there is no "choice" to be made.  If you don't have it available, you can't make a choice that goes against your goals, right?


This morning we had eggs (over easy) cooked in the bacon fat from the Fletcher's bacon.  I threw a handful of spinach on the griddle, too, and sauteed it in the bacon fat, too.  Quick, easy, and terrific.


This is primal.

Amish Baked Oatmeal

I got this recipe for Amish Baked Oatmeal from Blissfully Domestic in 2008.   I don't know if it is really Amish, but I do know that it is baked and has oatmeal.  What?  You don't know what baked oatmeal is?  Basically, you mix together oatmeal, milk, butter, egg, a little sugar and bake it.   It is a great thing to have as the weather cools down.  Best of all, you can prepare it the night before and put it in the oven when everyone is in the shower.  A half hour later, warm breakfast is ready for everyone and you did not start your day by slaving over a stove.  What can be better than that?

Amish Baked Oatmeal

Ingredients:
1 1/2 cups quick cooking oats
1/3 cup brown sugar (recipe calls for 1/2, but I reduced it)
1/2 cup of milk
1/4 cup of butter
1 egg, beaten
1 teaspoon baking powder
2 teaspoons vanilla extract
Pinch of salt (I used 1/8 teaspoon)

Directions:
Mix all together and place in greased 8 x 8 pan.  Cover and place in refrigerator or leave uncovered and bake immediately for 30 minutes at 350F.  (If you leave the cover on when you bake it, it is too soggy.)

Top with berries or eat plain (we like it straight out of the pan).

Seriously, is a quick and easy addition to your breakfast rotation.

My Very Best Friend in the Whole World (Yes, I'm 6!) Called Me This Morning...

...so instead of getting schooling and housework and crafts and projects done, I talked on the phone with her for 3 and a half hours! It was absolutely wonderful. I miss her as much today as I did the first day we drove away and it has been four years. We talked about children. (Her oldest headed off to college today! Trust me, if it hasn't happened to you, you have know idea how difficult it is. She's the one I called last year when Charming headed off.) Then we talked about husbands, decorating, housework, aging, churches and faith. (She is my absolute favorite person to talk about faith with because she is so open and honest.) It was so amazing to talk with her after such a long time. You'd never guess it had been months since we spoke. The best part, she knows me and loves me flaws and all. We don't gossip about anyone. She just makes my spirit soar!

Since I wasn't getting anything done, my amazing children decided to make breakfast for us all. (They miss Mrs. W and her family as much as I do. They also know just how much I miss her, so they went out of their way to NOT interrupt this phone call.) So, while I was chatting away, my sweet little kids did this!


Notice the flowers surrounding my bowl. Isn't that a wonderful touch? Truly I am so blessed. Thanks again for calling, K, I love you bunches and bunches.

(Sorry for the quality of the picture; it is difficult to hold a camera in one hand and a phone in the other! And now I must leave because I talked on the phone so long, I might be a bit late for an informational presentation for Buttercup's horseback riding lessons!)
